"Kyrgyzstan is a land of mountains and nomads, which has recently opened itself up to tourism. I took part in a small trekking tour that took us through beautiful mountain landscapes for three days. We lived in yurts and ate the local foods. The traditional nomadic lifestyle of the Kyrgyz people led to their use of horses for multiple purposes, including milk. This elder woman is demonstrating how to separate the constituent parts of mare's milk to make a traditional type of yogurt."
